Main ingredients:
- Cucumber: one piece
- Buckwheat noodles: 2 servings
- Salt: 1 tablespoon
- Toasted sesame seeds: 2 tablespoons
Seasoning ingredients:
- Tsuyu (seasoned soy sauce): 3 tablespoons
- Perilla oil: 4 tablespoons
- Lemon Juice: 1 tablespoon
Instructions:
Wash the cucumber and thinly slice it into rounds.
Add 1 tablespoon of salt and the sliced cucumber to 500 ml of water. Let it soak for about 10 minutes. Lightly rinse the cucumber under water, then squeeze out the moisture thoroughly using a clean kitchen towel or cheesecloth.
Add the buckwheat noodles to boiling water and cook for about 5 to 6 minutes. Drain the noodles in a colander, rinse them under cold water and drain well.
Place the buckwheat noodles in a bowl. Drizzle with the sauce, top with the cucumber, and sprinkle with toasted sesame seeds. Serve and enjoy!
