One-pan japchae is a simplified version of Korea’s beloved stir-fried glass noodles, delivering rich flavors with minimal effort. Cooked in a single pan, this quick and delicious recipe retains its signature glossy texture and deep umami flavor, making it a perfect, hassle-free meal for any occasion.

Main ingredients:

  • 100 grams glass noodles (dangmyeon)
  • 3 shiitake mushrooms
  • 100 grams oyster mushrooms
  • 1/2 carrot
  • 1/2 onion
  • A handful of garlic chives
  • Sesame seeds
  • 1/3 cup water
  • Cooking oil
  • Salt

Seasoning ingredients:

  • 2 tablespoons soy sauce
  • 1 teaspoon minced garlic
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • A pinch of black pepper

Instructions:

Soak the glass noodles in warm water for about 30 minutes.

Julienne the carrot, shiitake mushrooms, and onion, and tear the oyster mushrooms along the grain. Cut the chives into 5 cm lengths.

Mix the seasoning ingredients in a bowl. In a heated pan, add oil and stir-fry the onion, carrot and mushrooms with a little salt.

Add the soaked noodles and water, followed by the seasoning, and stir-fry until the noodles are well coated and cooked through. Turn off the heat, mix in the chives and sprinkle with sesame seeds to finish.
