Ingredients:

  • 1.5 kilograms pork ribs
  • Shredded green onions as needed
  • 1.5 liters water
  • 2 tablespoons cooking wine
  • 10 black peppercorns
  • 1 piece ginger
  • A pinch ground peanuts
  • Cooking oil as needed
  • Marinade ingredients
  • 2 tablespoons cooking wine
  • 1/2 teaspoon ground ginger
  • 1/2 tablespoon minced garlic
  • A pinch black pepper

Sauce ingredients:

  • 2 tablespoons soy sauce
  • 3 tablespoons water
  • 1/2 teaspoon ground ginger
  • 1/2 tablespoon minced garlic
  • 1 tablespoon sugar
  • 1 tablespoon gochujang (Korean red chile pepper paste)
  • 1 tablespoon oyster sauce
  • 2 tablespoons cooking wine
  • 1 tablespoon corn syrup
  • 4 to 5 peperoncini (optional)
  • A pinch black pepper

Instructions:

Soak the pork ribs in cold water for 30 minutes to remove the blood, then rinse thoroughly under running water.

In a pot, add water, cooking wine, peppercorns and ginger. Boil for about 15 minutes, then rinse the ribs under running water. (Tip: Pre-boiling deepens the flavor.)

Coat the boiled ribs with the marinade ingredients to season.

Lightly oil the ribs and cook in an air fryer at 180 degrees Celsius for 10 minutes. Flip and cook for another 10 minutes until golden.

In a pan, bring the sauce ingredients to a boil, then reduce to medium-low heat. Add the ribs and mix well to coat them evenly with the sauce. (Tip: If you prefer a milder flavor, substitute the gochujang and peperoncini with ketchup.)
