This plum preserve is a sweet and tangy syrup made by combining fresh plums, lemon juice and sugar. It’s perfect for summer and can be enjoyed diluted with water, soda or sparkling water. A short fermentation enhances the flavor, making it richer and more refreshing over time.

Ingredients:
- 2 one-liter jars
- 15 plums (1 kilogram plum flesh)
- 1 kilogram white sugar
- 3 lemons
- 1/4 cup baking soda
Instructions:

Fill a pot with cold water and place glass jars upside down in it. Bring to a boil. Once boiling, reduce to medium-low heat and continue boiling for 2–3 more minutes. Remove and drain the jars. (Keep jars standing while hot to allow steam to evaporate and speed up drying.)

Rub the plums and lemons with baking soda, rinse thoroughly under running water, and dry completely.

Cut the plums in half, remove the stems and pits, and slice. Slice one lemon into rings and juice the other two. (Alternatively, blend the plum flesh and strain through a coarse sieve to make a smoother preserve.)

In a large bowl, mix the sliced plums, sugar, lemon rings, and lemon juice. (Mix thoroughly to ensure the sugar reaches all layers, then leave at room temperature for half a day.)

Once the sugar has fully dissolved, transfer the mixture into sterilized jars and seal tightly. (Refrigerate and let it mature for about two days.)
