Ingredients:

500 grams pork shoulder

A handful of garlic chives

1/4 carrot

1/4 onion

A pinch of sesame seeds

Doenjang sauce ingredients:

1 1/2 tablespoons doenjang (Korean soybean paste)

1 tablespoon soy sauce

2 tablespoons oligosaccharide syrup

2 tablespoons cooking wine

1/2 tablespoon sugar

1 tablespoon minced garlic

A pinch of ginger powder

A pinch of black pepper

Garlic chive salad sauce ingredients:

1/2 tablespoon soy sauce

1/2 tablespoon sugar

1/2 tablespoon vinegar

1 teaspoon red pepper flakes

1 teaspoon sesame oil

A pinch of sesame seeds

(Serves 2 to 3)


Instructions:

Pat the pork shoulder dry with paper towels, then tenderize by pounding it with the back of a knife. Coat the pork evenly with the doenjang sauce and let it marinate for about 20 minutes.

Thinly slice the carrot and onion. Soak the sliced onion in cold water briefly, then drain. Cut the chives into 5-centimeter pieces.

In a bowl, mix the garlic chive salad sauce ingredients. Add the garlic chives, carrot and onion, and gently toss to coat.

Heat a pan with a little oil, add the pork and sear on both sides. Reduce the heat to medium-low and continue cooking until the pork is cooked through.

Serve the grilled pork on a plate, garnished with sesame seeds. Enjoy with the garlic chive salad on the side.
