Sempio to unveil soy sauce cotton candy

Local condiment maker Sempio Foods Co. said Friday it would unveil its soy sauce cotton candy on Sunday.

In Japan, ice cream and candies that use soy sauce have already been enjoyed. But it is the first time in the world that cotton candy has been made of soy sauce, the company said.

Based on the idea that saltiness adds sweetness in flavor, Sempio, best known for its soy sauce products, started research.

In order to make cotton candy, the research team enriched soy sauce then made it into powder.

“The amino acid in soy beans deepens the flavor of food and balances the differences of each ingredient,” said Lee Sung-jae, a Sempio researcher.

“We will use cotton candy to help consumers better understand the flavor and aroma of soy sauce. A patent application is also underway,” he said.

The cotton candy will be unveiled at a music festival, held as part of the 2011 World Organic Fair.
