Mu-malgeunjangguk (Clear white radish soup)

Mu-malgeunjangguk is a soup made with sliced squares of Korean radish boiled in water. It is seasoned with soy sauce and salt. Mu-malgeunjangguk is a basic everyday soup that is easily digested and thus good for children and the elderly. According to Oriental medicine, Korean radishes quench thirst, stop coughing and help digestion.

Ingredients

● 300g beef (brisket, shank), 8 cups water

● fragrant seasoning: 20g green onion, 10g garlic

● seasoning sauce: 1/2 tsp clear soy sauce, 1.1g (1/4 tsp) minced green onion, 1/4 tsp mince onion, 0.1g ground black pepper

● 300g radish, 5g kelp

● 1/2 tsp clear soy sauce, 1 1/2 tsp salt

● 20g green onion

1. Clean the beef and the fragrant seasoning.

2. Put the beef and water in the pot, boil it on high heat for 7 minutes. When it boils, lower the heat to medium and let it simmer for 30 minutes. Add fragrant seasoning and simmer for another 30 minutes.

3. Cut the radish into small squares.

4. Clean the kelp and cut it into squares. Slice the green onion.

5. Take the beef out from the broth, cut it into squares and season. Filter the soup through strainer.

6. Add the radish and kelp to the pot and boil for 7 minutes. Season with clear soy sauce and salt.

7. Add green onion and bring it to a boil.

Tip

● Autumn radishes are sweeter and more tastier.
